I wanted to start off the year on an organized note. In December, I bought a monthly meal planning calendar. I made a goal to plan meals ahead to make sure we had ingredients.
For the most part, I was able to plan each of our meals for the week on Sundays before I’d go to the grocery. Our plan wasn’t anything fancy, and did change some. I wanted to share a few of our favorites.
I didn’t take a picture, but Daniel’s favorite was definitely Chipotle Chicken and Rice Soup.
I liked the Hawaiian Turkey Burgers for an update version of plain old turkey!
Ground Turkey Chimichangas are one of go-to weeknight dinners.
One Pan Steak and Veggies was a super easy weeknight dinner!
Having plans for most meals was really great, I hope I can keep it up throughout the year. Even though I cooked more than I normally do, I thought we wasted less food overall. We took leftovers for lunches and froze some to have later on. Apparently we were really into Mexican food this month. I’m always on the hunt for quick and easy weeknight dinners! Hopefully I’ll more to share soon!
